An elegant, new restaurant is now open in the iconic Hotel Fort Des Moines. However, the hotel is still not open.“This entire project has been six-plus years in the making,” said Andrew Wilson.Wilson is the executive chef at Proudfoot and Bird, the new high-end restaurant in the renovated hotel. He’s ready to make it a go-to spot for downtown dining. Wilson calls it a throwback to the area of the 1920s and 30s.“So, it’s quite glamorous,” he said. Not only glamorous, but tasty. Wilson wants lunch and dinner customers to enjoy what he calls “new hearth American cuisine.”“I call it that for two reasons. Number one, I’m fortunate enough to have a massive, custom-built, wood-burning hearth. New American? Because America is the great melting pot even more so now than ever. So, we’re drawing influences from all types of cuisines,” Wilson said.Wilson says it’s taken a while to open the restaurant. The pandemic slowed things down. It’s also delayed the hotel opening, though that may happen in the next few weeks. Most of the renovations and decorating are complete. And if you do stop by, keep in mind the restaurant name, like the hotel, pays tribute to the city’s history.“The restaurant is named Proudfoot and Bird. It is named after the two original architects who designed built the Hotel Fort Des Moines as well as you’ll find their names on a lot of iconic buildings in the downtown area,” Wilson said.The big question now is when will the rest of the hotel open. The owner says a lot of that depends on the supply chain and the labor market here in DM.
